Banoffee and Marshmallow Cake

Ok, I'll admit, this isn't a very healthy recipe, but then you have to treat yourself once in a while don't you!! Below is a recipe to make a fantastic tasting banoffee and marshmallow cake. I'm sure you'll enjoy it as much as me.

This recipe should take around 30 min preparation and 50 min cooking time.

Ingredients

3 large bananas, 165 grams of butter, 165 grams brown sugar, 325 grams self raising flour, 4 eggs, 4 tbsp milk, 1 tbsp of baking powder, 1 tbsp of cinnamon, 300ml double cream, 50g marshmallows, 450g jar of caramel

Instructions

1. In a bowl mix together the flour, cinnamon and baking powder. Then, in another bowl add the sugar to the butter and whisk together until you have a smooth mixture.

2. Add the eggs one at a time to the butter/sugar mixture. For every egg you add, also add a tbsp of the dry mixture. Once all the eggs are added whisk up well and pour in the milk and any dry mixture you have left.

3. In a bowl peel two bananas and use an electric blender (or masher) to create a smooth banana paste. Add this to the mixture and fold together well.

4. Get yourself a cake tin around 20cm in diameter and use a little butter to grease the bottom and sides. Pour in all the cake mixture and place in the oven. This will need to bake for around 45 min. After 45 minutes push a knife into the centre of the cake - if it comes out clean you know it is ready.

5. Once the cake is baked remove from the oven and leave cool for several minutes. Then remove from tin and place on a a wire rack.

6. Now for the filling. Whip the cream in a bowl until it becomes quite stiff. Then cut the final banana and the marshmallows into small pieces and add them to the cream. Mix the whole lot up really well until you have a consistent banana/marshmallow filling.

7. Using a bread knife slice the cake horizontally into three equal layers. On top of the first layer spoon on the caramel followed by the cream mixture made in step 6. Add another slice of cake and repeat. Use the remaining caramel and cream on top of the cake, and if you wish, use some marshmallows to decorate the top of the cake. Done!
