Tandoori Grilled Chicken- Basically you will need 2 minced garlic cloves, half a teaspoon of ground ginger, half a teaspoon of cumin, half a teaspoon of cinnamon, 228g of unflavoured low fat yoghurt, 1 tablespoon of lemon juice and 4 boneless chicken breast halves.
Once you have all the ingredients, combine all the ingredients together and leave it in the fridge to chill. To make the Panini, place the flakes of mackerel onto the base of the bread. Top it with watercress and tomato. Top it with the remaining slice of bread and then place on the grill for 2 -3 minutes until the bread is lightly toasted. Serve with a spoonful of reduced crme fraiche dressing.
Lemon Pepper Salmon- This is probably one of the most interesting salmon dish you can prepare from his series of grill recipes. What you need is half a parsnip, half courgette, half red pepper with seeds removed, half yellow pepper with seeds removed, 1 teaspoon of herb infused oil and black pepper. You can choose yellow pepper if you want to. To make the whole grain mustard and dill crme fraiche, use finely chopped fresh dill, 3 heaped tablespoon of reduced crme fraiche, and 1 teaspoon of wholegrain mustard and white pepper.
Next, cut the chicken into 1 inch pieces and place them in a medium bowl with the mushrooms. Mix the parsley, juice, rosemary, thyme, broth, vinegar, salt and pepper and pour it over the chicken and mushrooms. Leave to marinade for approximately 4-12 hours in the fridge. Next get your kebabs ready by threading the chicken and mushrooms onto the skewers. Preheat your grill before placing the kebabs there. When your chicken is cooked and the mushrooms slightly charred, your kebabs are ready.
